Beyond the spiritual side, Christmas also means the joy of delicious desserts, with many calories that we no longer take into account. And vegans can also have sensational cakes on the festive table!
If you’ve invited vegan friends to the winter holiday meals, don’t panic! There are great vegan cookie recipes you can make for them so you don’t feel embarrassed that they’re munching on cashews while you’re enjoying eclairs.
Banana, cranberry and cocoa cake
Ingredients:
180 ml of almond milk
60 ml melted coconut oil
2 very ripe bananas
vanilla extract
150 g muscovado sugar
150 g flour
40 g of cocoa
50 g dried cranberries
1 tablespoon ground flax seeds, soaked in warm water for 15 minutes
1 bag of baking powder
½ teaspoon salt
2 tablespoons of vegetable oil and 1 tablespoon of cocoa for greasing the pan
Prepare it as follows:
In a bowl, turn the bananas into a paste with the help of a fork and add all the liquid ingredients, as well as the flax seeds.
In another bowl, combine the dry ingredients, minus the cranberries.
The liquid ingredients are then mixed with the dry ingredients and everything is placed in a pan greased with oil and lined with cocoa. After leveling everything nicely, sprinkle the cranberries on top and put everything in the oven for 40 minutes at 180 degrees.
Walnut and pumpkin dessert
For this super delicious and very easy to make dessert, you need the following ingredients:
300 gr walnut
1 1/2 cups baked pumpkin
300 gr dates
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1/2 teaspoon freshly grated ginger
1/2 teaspoon cardamom
2 tablespoons melted coconut oil
Prepare it as follows:
Grind the walnut, but not very finely, and choppe the dates with a knife and add them on top of the walnut. Place the mixture in the food processor and process for a few minutes until smooth.
Then you add the baked pumpkin, spices and coconut oil! Mix for another 2-3 minutes until everything is well incorporated. It can be served in transparent bowls and decorated with walnuts, cranberries or other dried fruits and cinnamon sticks.
